The Italian consumer's relationship with salmon, whether fresh, smoked, or frozen, has changed radically over the last twenty years. It is purchased fresh, but especially smoked, and almost all of it is imported, primarily from Norway, Scotland, and Alaska.

  • Speed of use

    Smoked salmon slices are as readily available as deli meats, without compromising the quality/price ratio. Approximately 90% of the salmon on the market is farmed Atlantic salmon (Salmo salar). All other species live in the Pacific, but are remnants and mostly destined for non-EU markets. Farmed salmon is raised in controlled environments with extremely pure, bacteria-free water, and in the case of Norwegian farms, it can even be consumed raw without being slaughtered.
